As we finish up another year of beer, it’s time to look ahead to what we’ll be pouring, sipping and loving in 2018. I’ve reached out to a few of our town’s best brewers to see what we can expect from them in the next Year of Beer.
One of the highlights of the 2017 year in beer, was the opening of the long-awaited Third Wheel Brewery and taproom in St. Peters.
Third Wheel Brewing brews an inviting culture filled with beer, food, and friends. Everyone there is a ‘stooge’ and the ‘stooges’ want to be your friend. They want to get you a beer, while you get yourself some food from their walk-up kitchen window. The place is large and spacious and everyone, including kids, are welcome.
Third Wheel is the first local brewery to bring suds to St. Peters and also provided beer lovers with the long-awaited professional debut of brewmaster Abbey Spencer. Spencer, a former homebrewer, has been involved in the local brewing community for years. Now she’s wowing the local scene.
What Can We Expect in 2018
You can imagine after spending over two years building your brewery things can get a bit hectic. Spencer tells me her main goal for the new year is to “get better organized.”
“Currently, we are brewing what we want when we want it. I want to bring a little more strategy to seasonals, special releases and year round offerings. That being said, you’ll see our year round brews honed in which will include Ophelia’s Wit (Rosemary Witbier), Enter Sandman (Red Ale), Goomah (Chocolate Vanilla Milk Stout), Dyslexic API (Double IPA with Lactose), and Trixie’s Pale Ale (APA with Cascade and Amarillo).” — Abbey Spencer
The popular Coffee Porter will be kept on through the Fall and Winter along with other awesome variants of Porter throughout the year. Make a note to look for Imperial Oktoberfest in August and Cranberry Farmhouse in the Fall months and Peppermint Goomah will return for the holiday season.
The team is about to fill their Rye Whiskey barrels, so look for the return of B.O.S.S., their Imperial Stout, which we featured back in September as part of our Beers We Love series.
New Releases
The first beer release will be a Black IPA on January, 28th.
Opaque black in color with hops that are a mix of super citrus and fairly dank. Those are added to a base not too different from our Porter, so no roasted barley, but a healthy amount of chocolate and caramel malts, coming in around 7% ABV. What is left is a medium bodied beer with a strong citrus aroma, medium citrus, caramel and a healthy amount of chocolate flavor, and a great balance between dark malt and dank hop bitterness on the finish.
Black IPA will be followed by a seasonal fruit beer variant. The beer base will remain the same, but they’ll swap up the fruit depending on what is in season at the time.
“You’ll definitely see a return of our Pilsner, Hidden Pool. I’m planning to expand our kettle sour program to include a Gose and a fruited Berliner Weisse. Lastly, I’m pretty pumped to have started our barrel program. We’ve slowly been acquiring barrels here and there. We’ve already started aging our Porter in Port barrels,” — Abbey Spencer
Trying Something New
There is definitely a chance of something completely new this year. Singular Day (NE IPA) and Hanging Pants (APA) were both new recipes for Spencer, which the team just completed full batches of, without a test run. “Its pretty rare I’ll do that, but I wouldn’t put it past me to do it again since I haven’t been burned. Yet,” said Spencer.
