Where to find beer from Deep Sleep Brewing

I meant to write about this new beer maker back in November, so forgive my tardiness. Please allow me to introduce you to Nick Lyons and the Deep Sleep Brewing Company.

Based in Washington, Missouri, Deep Sleep is indeed a brewery, but one without a tap room.

Lyons is a nurse anesthetist with a passion for brewing craft beer.  A nurse anesthetist is an advanced nurse who administers anesthetics in all practice settings and provides care for all operations or procedures. In essence, Lyons is responsible for making sure patients in his care, as well as the fans of his brewing, enjoy “deep sleep.”

The Beer And The Philosophy

“Beer is fun. Beer is natural. Beer brings all different types of people together,” said Lyons. “Beer is about community. Beer is about relationships.  Beer is about chemistry and cell biology.  Beer is art. Beer is science.  Beer has endless possibilities.”

With that as the basis of his brewing, Lyons and Deep Sleep Brewing first began distributing its beer in January of 2018. They began with two brews, Racemic Red Ale, an Irish Red Ale that is made with all types of beer lovers in mind. Known for its reddish hue. This is a malt forward beer with almost zero hop flavor or aroma.  Easy to drink with finishing notes of toffee, caramel, and malt.

RSIPA is a DIPA, but is not overly bitter. It has a light to medium body and is made using almost all late-hop additions. It is a big beer, clocking in at 10.1% ABV.  This beer has a robust characteristic of citrus and melon fruits.  It has a blend of three ale yeasts and four types of hops all added in multiple late hops and dry hop additions.

Just recently, Lyons has added a new beer, perfect for summer loving.

And in addition to brew, Lyons has added a cider to his menu. The Stage 2 Hard Apple Cider is a balanced profile of sweetness and tanginess. Starting with a bold apple cider base sourced from the American Pacific Northwest, apples which are specifically produced with hard apple cider in mind. Cider tartness is tamed with back sweetening and then carbonated for a hard apple cider that is refreshing and crisp. 5.5% ABV.

As we stated at the top, Deep Sleep Brewing is a brewery without a taproom.  They currently do growler fills and keg rentals by appointment.
