Waterloo, IL’s Stubborn German Brewing Co. has always been a safe bet for clean lagers, big IPAs, and a rock-solid lineup of true-to-style German beers. But right now, there are three Stubborn German new beers on tap — and they’re unlike anything you’ve tasted here before.
Head brewer Steve “The Brewer” Agnew got the keys to the brewhouse and the green light to play, and he’s delivering some of the most creative pours we’ve seen at Stubborn German. These beers aren’t just different — they’re the kind that make you want to grab a flight and geek out about what’s in your glass.
🍒 Sunset in Brussels (Cherry Witbier) — 4.7% ABV
A Belgian witbier is already a patio classic — hazy, pale, light on its feet — but this one has a rosy secret. Steve added tart cherries, Lemon Drop hops, and coriander for a beer that’s soft, slightly fruity, and a little cheeky. It’s got just enough zip to keep you coming back for a second pint, and that blush color? Instagram bait.
🌾 Farm Livin’ (Grisette/Saison) — 4.5% ABV
Grisettes are a beer nerd’s dream: the lighter, more crushable cousin of the saison, brewed for thirsty Belgian miners and farmhands back in the day. Farm Livin’ nails it — corn, wheat, rye, and Pilsner malt give it a rustic backbone, while Saaz, Lemon Drop, and Saphir hops keep it bright and floral. Dry, crisp, a touch spicy — the perfect “table beer” for a charcuterie board or just, you know, another round.
🌺 Island Boy (Berliner Weisse) — 4.3% ABV
Island Boy made its debut last fall, but it’s still the tropical daydream we all need. A Berliner Weisse — famously dubbed the “Champagne of the North” — it’s tart, highly carbonated, and loaded with mango, guava, passionfruit, and hibiscus. Basically, it’s a vacation in a glass, no plane ticket required.
Why You Should Go
This is what happens when a brewery trusts its brewer to get creative — you end up with a tap list that feels fresh and just a little adventurous. These Stubborn German new beers won’t stick around forever, and honestly, they’re best tasted side by side. Grab a flight, settle into the taproom, and toast the guy who made it happen.
