Millpond releases first Pale Ale in its ‘Body Of Water’ series

The town of Millstadt, Illinois has strong roots as a farming and milling community. At one time the town boasted three mills, and in a rare arrangement, these three mills shared the same millpond.

In communities such as Millstadt, the millpond was a place for fun. During the summertime residents of the community would swim, fish, have picnics, and hold family gatherings at the millpond. In the wintertime, they would skate on the frozen water and sled on its banks. Millponds became the first, defacto, city parks.

This past spring, this historic link to water became Millpond Brewing & Incubator‘s muse for their “Body Of Water” series of New England Style  IPA’s and Pale Ales. The newest series release, Creek, came out last week.

This is the first Pale Ale release in the series. Millpond owner  Bryan L. Schubert wanted to use his go-to NE IPA water profile, the same grain bill as earlier releases Reservoir and Cenote, and a yeast strain that works well with fruit and citrus-forward hop varietals to create a bit of honey-like sweetness during fermentation.  In addition, similar to Cenote, the brewing team mashes a bit higher than Reservoir leaving a touch more residual sweetness giving the beer a round juicier finish.

The Beer’s Name

“Reservoir and Cenote were our first two IPA’s in this series,” said Schubert. “And Creek is the first Pale Ale. Larger bodies of water for the IPAs and smaller ones for the Pale Ales, at least we thought it was a good idea.”
